Cast Iron Creations: Berry Honey Cake

INGREDIENTS

• . cup butter, softened

• 1 cup honey (plus more for drizzling)

• 2 eggs, room temperature

• . cup plain greek yogurt

• 1 tablespoon vanilla extract

• 2 cups all purpose flour

• 2 teaspoons baking powder

• 1 teaspoon salt

• 1 cup mixed berries of your choice

• Nuts of your choice, toasted and chopped

DIRECTIONS

1. Grease a 9-inch cast-iron skillet.

2. In a large mixing bowl, beat the butter

and honey until blended.

3. Add eggs, 1 at a time, beating well after each

addition. Add in yogurt and vanilla.

4. In another bowl, whisk flour, baking powder and

salt; add to butter mixture.

5. Transfer batter to prepared skillet.

6. Bake in a preheated 350Åã oven until done,

30-35 minutes.

7. Allow to cool completely before topping with

berries, additional honey and chopped nuts.
