Ms. Jess' Pecan Pie

Ingredients:

Pie dough

1 ½ cups all-purpose flour (plus extra for dusting)

¼ teaspoon salt

½ cup salted butter, chilled

¼ cup ice water

Pecans

2 cups pecan halves

2 tablespoons salted butter

Pie filling

3 eggs

¾ cup brown sugar

¾ cup white sugar

½ cup melted butter (cooled slightly)

1-tablespoon vanilla extract

1 tablespoon white vinegar

1-tablespoon cornmeal

2 cups buttered pecans


Preparation:

1. Toast pecans in skillet on medium heat. Stir constantly for 4-5 minutes. Set aside.

2. Prepare dough. In a large bowl, combine flour and salt. Cut in butter until mixture and

combine until it resembles course crumbs. Mix in water a few drops at a time until mixture

forms a ball. Refrigerate 30 min.

3. Prepare filling. In a large bowl mix eggs, brown sugar, white sugar, butter, vanilla, vinegar,

cornmeal. Combine until smooth.

4. Dust table with extra flour. Rollout pie dough large enough to fit a 9-inch pie pan. Place

crust in pie pan. Press dough to bottoms and sides.

5. Add pie filling mixture to pie pan. Top with 2 cups toasted pecans.

6. Cook pie on 350 degrees for 45-60 min. let cool. Serve pie at room temperature.
